Paula’s Crescenza, styled after the fresh, rindless Italian cream cheese, has a unique and lovely texture. Creamier than mozzarella, it spreads at room temperature, but like a thick cream cheese, it can also be cut into slabs or cubes. Its flavor is bright: slightly tart and pleasantly yeasty. Delicious cold, Crescenza also melts beautifully.
