Blanca Bianca is a creation of Paula’s inspired by the washed-rind cheeses she ate in France. She washes this raw milk cheese with white wine to develop its mild earthy flavor and supple texture. Like all washed-rind cheeses, Blanca Bianca is a treat for those who aren't afraid of a little funk.
