Stuart Veldhuizen is unstoppable when it comes to making great cheese. This latest one, his first blue, is named for the Bosque (pronounced BOSS-key) River near the Veldhuizen Family Farm. Much like a Stilton, Bosque is robust in flavor with a creamy, yet crumbly, texture. Its lovely straw-yellow coloring is thanks to all the healthy grass that his free-ranging cows get to munch on.
