Stuart Veldhuizen’s take on an Alpine cheese. Green’s Creek Gruyere ages in their on-farm cave for up to 9 months. The result is a semi-firm cheese with intense flavor. While hitting key notes of the Swiss classic, this Gruyere has a subtle nutty flavor all its own.
