Homemade Chocolate Hazelnut Spread & Green Hill Brie on Brioche
 
It's no secret that I like decadent things. My favorite fat girl breakfast treat is a brie grilled cheese. I mostly eat them when no one else is around. It's wonderful with fig or cherry preserves, fresh pear or bacon. But this version with homemade chocolate hazelnut spread on buttery, fluffy brioche is in a whole different league. It's in the "brings tears to your eyes" league.  

1 cup Freddy Guys Roasted Oregon Hazelnuts
about 1 tablespoon Freddy Guys Hazelnut Oil 
Sea Salt 
4 mini TCHO Dark bars (about an ounce) 
Brioche Loaf, sliced thick 
Lucky Layla Golden Butter, room temp 
 
For chocolate hazelnut spread: Grind hazelnuts in a food processor to a fine powder, for about 10 minutes. Add a little hazelnut oil and continue processing until it becomes smooth and creamy, stopping to scrape down the sides. This could take some time depending on your food processor. Add a pinch or two of sea salt at the end, process to combine. In a double boiler, slowly melt chocolate until smooth, then add to your hazelnut butter, mix well. Transfer to a glass jar and keep refrigerated. 
 
To assemble grilled cheese: Heat griddle to medium high. Generously butter one side of each slice of bread. Remove rind from brie and evenly disperse pieces of brie on brioche. Spread hazelnut chocolate on other piece of bread, assemble and grill until brie is gooey and brioche is golden and crispy. Enjoy immediately.
