Pimento Brulee
Southern cooking can and will involve pimento cheese. It's shameful how many dishes I can sneak this mayo laden mosaic into... try it in scrambled eggs, grits, or on a grilled cheese. If you have a chef torch in your possession try brulee-ing it. I used spicy sugar to caramelize the top. Yep, this molten, cheesy goodness did not last long.
8 oz Words & Food Pimento Cheese
about 1/2 tablespoon granulated white sugar
Heat oven to 350. Put pimento in a 9-10 oz oven-safe dish and bake for 20 minutes, until golden and bubbly. Combine chili powder and sugar to make a spicy sugar for the brulee crust. Just before serving, sprinkle evenly over baked pimento. Use a chef torch to melt sugar until a deep dark brown crust is formed. Serve with pita chips or homemade crostini.
