This Week's Tasting: July 3, 2018

Every week at Dairymaids we select six cheeses to include in our free cheese tasting.
Whenever we are open, we are tasting cheese. 
We stock over 150!

Death & Taxes is the newest cheese from Bleating Heart in California. It is made from organic Jersey cow's milk and washed with Moonlight Brewing's "Death & Taxes" black lager. The beer darkens the rind, making it look like stained wood, and imparts a chocolately, malty aroma. Robust, but still subtle, Death & Taxes has a dense, rich mouthfeel.

Also on our tasting plate this week:

Fresh Burrata, a creamy, Italian fresh cheese from Di Stefano in California.

L'Ottavio, a raw cow's milk cheese from Italy made with thistle rennet and beer.

Promontory 2yr, an aged cow's milk, Irish style cheese from Beehive Cheese in Utah.

Goat Gouda, a goat's milk gouda from the Central Coast Creamery in California.

Smokey Blue, a rindless, cow's milk blue smoked over hazelnut shells by the Rogue Creamery in Oregon.

Our wine of the week is Scalabrone from Tentua Duado al Tasso in Bolgheri, Italy. We taste wine from 10am to 2pm on Saturdays.

Our pairing of the week is Pumpkin Seed Salsa from American Spoon in Michigan.
