This Week's Tasting: June 12, 2018

 

Every week at Dairymaids we select six cheeses to include in our free cheese tasting.
Whenever we are open, we are tasting cheese. 
We stock over 150!

Bayley Hazen is an original, natural-rinded blue cheese from the Kehler brothers of the Cellars at Jasper Hill in Vermont. The brothers hand-make this remarkable blue with raw milk from their own herd of Ayrshire cows. The paste is firm and fudgy and the flavor changes with the seasons, but often boasts nutty, grassy and fennel-like notes.

Also on our tasting plate this week:

June's Joy, a fresh goat's milk chevre whipped with honey, black pepper, and thyme from the Pure Luck Dairy in Dripping Springs, Texas.

Thomasville Tomme, a raw cow's milk Tomme-style made by the Sweet Grass Dairy in Georgia.

Tarentaise, a raw cow's milk Alpine-style made by the non-profit Spring Brook Farms in Vermont.

Margot, a cow's milk washed and flavored with local, craft beer by Caseficio Rosso in Italy.

Roelli Haus Select, a cow's milk cheddar aged for one year by Roelli Cheese in Wisconsin.

Our wine of the week is the Les Copains Rosé from McPherson Cellars in Lubbock, Texas. We taste wine from 10am to 2pm on Saturdays.

Our pairing of the week is a Wildflower Honey Mustard from American Spoon in Michigan.
