Smoked over native Texas pecan wood, Scamorza is similar to a firm mozzarella. For smoking it is dipped in wax and suspended by a string in the traditional Italian manner. Paula’s scamorza has a great melting texture with a subtle, smoky flavor. Scamorza is available in our Texas Trio gift box.
