Successful cheesemaking requires great patience and attention to detail. Once made each wheel must be regularly and carefully tended by turning, washing, and brushing. The qualities required for such work are what makes Brazos Valley cheesemakers Marc Kuehl and Rebeccah Durkin so well suited to the art of cheesemaking.
Marc and Rebeccah are members of the Brazos de Dios Community, a group of about 1000 people who practice traditional farming and craft on 500 acres along the Brazos River near Waco. Although they have cars, cell phones, and other modern conveniences, they most value efforts to make things slowly, by hand, and in tune with the natural environment. As a result, they are experts in carpentry, farming, metalwork, pottery, and weaving.
Since Marc came on board several years ago to promote the business, demand for Brazos Valley Cheese has expanded beyond what their own herd can provide for. They now buy Grade A milk from two nearby dairies that have mostly Jersey cows. Their selection of raw milk cheese is varied and constantly changing. We've chosen their Havarti, Gouda, and Blue to be our current favorites.
Brazos Valley cheese presents us with the perfect opportunity to slow down and share well-made food with those around us, which is just what Marc and Rebeccah would want us to do.
