We met Susan Holle back when Dairymaids and Cheesygirls were just gleams in our respective eyes. She was at that point still in search of a location to make goat’s cheese with vegetarian rennet. After that initial talk, we agreed that Susan was one of those rare folks who had the energy and enthusiasm to pull a cheesemaking operation off. Consider our delight when she invited us out to her fully equipped dairy in Sealy!

Of cheesemaking Susan says, “I finally found a niche that meets all my passions.” Coming from the medical profession, Susan is comfortable with the science, the sanitation, and the “operations management” of the trade, but what drives her is love for the animals and for the artistry of the craft.

Intrepid though she is, she realized early on that she couldn’t run a farm and a cheesemaking business. She found a partner in a local goat farmer who delivers Grade A milk fresh to her factory. From there, she makes it into fresh chevre, an assortment of spreads, and a camembert. Her names reveal her sense of whimsy – plain chevre is “Buff” and her camembert a “Satin Doll.”
