Good cheesemaking is the product of years of study and practice of generations-old methods ...right? Well, not necessarily. Throughout Texas you'll find cheesemakers who fearlessly perfect their craft with few teachers or recipes, and with excellent results. One striking example of this pioneer cheesemaking is young Chrissy Omo of CKC Farms in Blanco, TX.

Cheesemaking at CKC is a family affair with younger brothers Kenny and Connor (the K and C of "CKC") chipping in and Mom and Dad giving their full support. The inspiration, however, comes from Chrissy, who after visiting cheesemakers in Italy came back impassioned and determined. Now in her third year of goat-raising and cheesemaking, Chrissy seems as happy and confident as ever. Her efforts are impressive. We love her Baby Caprino, a small, soft-ripened round, and her Baby Blue, a soft blue with a molded rind reminiscent of Montbriac. There is still a lot of play and experimentation in Chrissy's cheesemaking. Her mother, Adrianna, encourages this sense of freedom. "I want her to enjoy herself," she says.

She is, after all, still in college.
