This Week's Tasting: February 26, 2019


Every week at Dairymaids we select six cheeses to include in our free cheese tasting.
Whenever we are open, we are tasting cheese. 
We stock over 150!

Barnburner is a collaboration between Grafton Village in Vermont and the Crown Finish Caves in Brooklyn. The young, raw cow’s milk wheels are made in Vermont and colored with annatto seed then sent to Crown Finish. In Brooklyn, the wheels are cold-smoked for two hours and bandaged before spending 4 months in Crown Finish's aging caves.

Also on our tasting plate this week:

Green Hill, a Camembert-style brie from the Sweet Grass Dairy in Georgia.

Cotzwold, an aged goat's milk cheese flavored with chives from the Latte Da Dairy in Flower Mound, Texas.

Hafod, a clothbound cheddar from Holden Farm in Wales. 

Stracapra, an washed-rind style made with goat's milk in Italy.

Glacier Blue, a natural-rinded blue made with raw cow's milk from the Cascadia Creamery in Washington.

 Our wine of the week is a Sauvignon Blanc from Giesen in New Zealand. We taste wine from 10am to 2pm on Saturdays.

We're also sampling Carmelized Onion Crackers from Potter's in Wisconsin.
