This Week's Tasting: January 8, 2019

 

Every week at Dairymaids we select six cheeses to include in our free cheese tasting.
Whenever we are open, we are tasting cheese. 
We stock over 150!

Baby Caprino, from the CKC Farms in Blanco, Texas, is made by our youngest Texas cheesemaker, Chrissy Omo. Chrissy modeled this cheese after the soft-ripened goat's milk cheeses she had while travelling in Italy. Baby Caprino has vegetable ashe pressed under its bloomy rind and a creamy, cheesecake-like texture and has bright, fresh flavors.

Also on our tasting plate this week:

Main St. Jack, a Jack-style rubbed with coffee, chocolate and black pepper and made with raw cow's milk at Revelations Artisan Cheese in Meridian, Texas.

Roth's Private Reserve, a raw cow's milk, Alpine-style from Roth Kase in Wisconsin.

Berkswell, a semi-firm, raw sheep's milk cheese from Julie Hay in the United Kingdom.

Reverie, a traditional Toma style cheese made with raw cow's milk at the Parish Hill Creamery in Vermont.

Dunbarton Blue, a cheddar made in the English style then pierced with blue mold from Roelli Cheese in Wisconsin.

Our wine of the week is Barbera from Cantina di Casteggio in Italy. We taste wine from 10am to 2pm on Saturdays.

We're also sampling Triple Berry  Jam from American Spoon in Michigan.
